Drying apricots

Apricots, raisins, prunes and dates are all popular dried fruits. In Central Otago apricots are dried by the hot summer sun, rather than by artificial driers. The apricot kernels can be used in confections and to flavour liqueurs. Like bitter almonds, apricot kernels are poisonous until roasted.
