Freezing works were a prominent part of the Southland landscape from the mid-1880s, after the advent of refrigeration for long-distance shipping. The Bluff works was one of the first. Stock had to travel further to reach it, but it was near the wharf where the carcasses were loaded onto ships bound for Britain.
